Like the cookbooks that came before it, <em>Dining In<\/em> and <em>Nothing Fancy<\/em>, <em>Sweet Enough<\/em> is a dive into relatively easy recipes that can be made without fancy ingredients or chefs\u2019 tools. Amongst the book\u2019s highlights are the Raspberry Ricotta Cake, which can be made without a mixer, and the Old-Fashioned Strawberry Cake, which tastes fried but isn\u2019t because, as described on its corresponding page, \u201cI will not heat up a large pot of oil and drop in the batter and fry, hoping I have not undercooked the insides or overly fried the outsides, then have to deal with the hot oil\u2014even typing that feels exhausting.\u201d Creating the recipes for Sweet Enough was the first time that Roman had explored desserts in a big way since working as a pastry chef at restaurants like Momofuku Milk Bar in her early days. \u201cThe freedom to have things not be perfect all the time is very important, and it\u2019s not something you see very often in dessert books,\u201d she says.<\/p>\n\n\n\n<p>In her columns for <em>Bon Appetit<\/em> and <em>New York Times Cooking<\/em>, Roman became famous for her anything goes approach to food, throwing caution to the wind with suggestions that made cooking feel like adventure. \u201cSo, the recipe calls for one shallot, but because I\u2019m a fucking bitch I put five,\u201d says comedian Chloe Fineman in a 2020 Instagram parody of one of Roman\u2019s viral recipes (the skit is called #TheFish, emulating Roman\u2019s #TheStew or #TheCookies). \u201cSo what, I want to smell like a shallot. Sue me!\u201d These Romanisms\u2014along with others like an unabashed love for anchovies and a distaste for \u201centertaining\u201d (she prefers having people over)\u2014are entrenched in Millennial culture.<\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"683\" height=\"1024\" src=\"http:\/\/smagazineofficial.com\/wp-content\/uploads\/2023\/06\/caramelized-onion-and-anchovy-tart-a-perfect-snack-1-683x1024.jpg\" alt=\"\" class=\"wp-image-40527\" srcset=\"https:\/\/smagazineofficial.com\/wp-content\/uploads\/2023\/06\/caramelized-onion-and-anchovy-tart-a-perfect-snack-1-683x1024.jpg 683w, https:\/\/smagazineofficial.com\/wp-content\/uploads\/2023\/06\/caramelized-onion-and-anchovy-tart-a-perfect-snack-1-200x300.jpg 200w, https:\/\/smagazineofficial.com\/wp-content\/uploads\/2023\/06\/caramelized-onion-and-anchovy-tart-a-perfect-snack-1-768x1152.jpg 768w, https:\/\/smagazineofficial.com\/wp-content\/uploads\/2023\/06\/caramelized-onion-and-anchovy-tart-a-perfect-snack-1.jpg 1000w\" sizes=\"auto, (max-width: 683px) 100vw, 683px\" \/><\/figure><\/div>\n\n\n<p>Roman\u2019s passion for anchovies, as evidenced by her hefty portions in viral dishes like the Caramelized Shallot Pasta (an entire can for one recipe) ignited a continental renaissance of the salty fish. \u201cI\u2019m obviously not the first cook to use anchovies, but I did feel really passionate about them in a way that I wasn\u2019t afraid to constantly talk about\u2014even in the face of people being like, \u2018that\u2019s disgusting.\u2019 I felt comfortable having an opinion even though it was unpopular, and now it\u2019s popular,\u201d she says. When I tell her that I use my own love of anchovies to weed out timid paramours on my dating profile, she laughs, saying, \u201cI feel like if people aren\u2019t into anchovies, you\u2019ve gotta keep it moving. You can\u2019t keep those people in your life.\u201d<\/p>\n\n\n\n<p>Roman relishes the outsized role she\u2019s grown to play in people\u2019s lives. And you could say she\u2019s in her comeback era after working her way back from a messy 2020, during which she caught the eye of the celebrity cancellation storm for her criticisms of Marie Kondo and Chrissy Teigen, both of whom had recently capitalized on their fame with product lines that\u2014to Roman\u2014felt antithetical to the values they espoused. That both women were of Asian descent escaped Roman, resulting in a maelstrom of upset amongst fans and especially media members. \u201cIt\u2019s a thing that I have discussed ad nauseum and I\u2019m really so tired of talking about it, if I\u2019m being honest,\u201d she says.
